Briar Ridge Dairy Hill Shiraz is sourced from the estate Dairy Hill Block in the heart of Hunter Valley wine country, grown in sandy loam soils over a rich limestone base.
The handpicked fruit is destemmed through the chiller to tank. Three days of cold soaking enhances the colour and fruit characters of the juice. For fermentation it is inoculated with a specific yeast strain.
After 10 days, the wine is pressed off skins to French oak puncheons, one third new. Malolactic fermentation and 18 months of ageing in barrel follows. The final wine is then blended in tank, fined and filtered to bottle.
Crimson purple, Briar Ridge Dairy Hill Shiraz, in true Hunter Valley style, has intense red fruit flavours with savoury, spicy notes. Cellaring potential is 10 years.
